Garlic (Allium sativum) is one of the most widely used culinary herbs in Mediterranean cuisine. The phytochemically active compounds in garlic belong to a class of sulfur-containing compounds, the most important of which is alliin. Alliin is converted into allicin when garlic is crushed or chewed, which gives garlic its characteristic odor and is believed to be responsible for its beneficial properties.

Traditionally, garlic has been used to support cardiovascular health due to its properties in maintaining normal cholesterol levels* and healthy blood pressure*.
